Hello!.. My husband is moroccan, and i finally gave in and cooked some Beef Tagine for him and his friends (also moroccan). if I remember correctly I could tell you the beef tagine..(just substitute chicken) First, I covered the bottom of the pot with about an inch of Vegetable Oil (substitute for oil of your choice)...i then put in the meat along with oregano, parsley, pepper, salt, CUMIN (there's something about Cumin and moroccans..lol), garlic is also a must have, and whatever other spices you chose i guess. I let that simmer for about 7-10 minutes. After that, I put in the water (make sure it covers the meat and veggies), the sliced potatoes, carrots, celery if you want (pretty much any vegetables you want). Then let it cook for about 45 minutes or so. you'll know when it's done because your whole place will smell delicious! :-) It's basically just a stew. Now, the couscous...I have noooo idea..my husbands dad in morocco says it takes his wife 1 1/2 to 2 1/2 hours...(if i remember correctly) just to prepare the couscous...it's very tidious if you want it to come out right.
