Hi! I´m a native spanish speaker but I can help you. In French, "de" generally means "of". It´s a possessive particle. But in negative sentences like that (je ne peux pas manger..)"de" is used to introduce the object (gateaux) because it cannot go alone like in english ("I cannot eat cake").
About the sound, is a soft "d" (like in "do")with a short "e" (like the "e" of empty.) Good luck!
