Just wondering if 'ca va' or coucou are considered proper and polite greetings or saved only for close friends/youngsters?

" ça va?" means "how are you" and is used when you know the person you are talking to.
"Coucou" means "hi or hello" and is also used when you know the person you are talking to.

Polite form of "ça va?" is "comment allez-vous?".
Polite form of "coucou" is "bonjour" (day) and "bonsoir" (evening and night).
